Five popular relishes from Indonesia, plated in saucers of mini stoneware mortars. The saucers are arranged on a large banana leaf. The relishes are (in clockwise direction starting from top right) Sambal Lado Mudo / Sambal Cabe Ijo (Green Chili Paste) from West Sumatra; Sambal Dabu-Dabu (Fresh Chili and Tomato Salsa) from Sulawesi; Sambal Mangga (Unripen Mango Relish) from West Java; Sambal Matah (Raw Chili and Lemongrass Salsa) from Bali and in the center is Sambal Tomat (Tomato Chili Paste) popular across Java Island and Bali.
